EZ*PZ Apple Cupcake Tennis Balls

As September goes by once again, so does tennis season. As tennis season goes by for one final time, we celebrate the past 4 years and all of the work that has gone into those long, hot days spent on the courts. Senior year means “lasts”. Last first game, last match, and last senior night.
Senior night, the night that we dread year after year as a team. The day that we have to say goodbye to our teammates, the day that our friends will walk off the courts and are not a part of the team anymore. This day breaks my heart year after year.
This year, as a senior, the day is bittersweet. Saying goodbye to the courts and my friends but also knowing that I’m getting closer to know what lies ahead of me. This year, for senior night, I wanted to put my two loves together- tennis and simplicity. After I have watched my mother make this type of apple cake for years, I thought why not put a twist on it and make them into tennis balls.

Ingredients:
White cake mix
3 eggs
Can of apple filling
Cupcake pan
Cupcake liners
Coolwhip
Vanilla pudding packet
Yellow and green food coloring
Ziploc
Bowl
knife

In a mixing bowl; add the white cake mix, 3 eggs, and the can of apple pie filling. You can cut up the apples a bit more so they are not as huge and are more spread out throughout the batter. Mix the ingredients together until they are evenly spread throughout.

Preheat your oven to 350 degrees.

Line your cupcake tray with the 18 cupcake liners. Add the mix to the liners so they are about ¾ full. Place the cupcakes into the oven and set the timer for 20 minutes. Once the cupcakes are done, set them aside to cool.

Mix the cool whip and about one-half of the packet of pudding together. This will be the frosting for the cake. Add more pudding as needed to make the consistency thicker. Once both the pudding and cool whip are mixed evenly together, separate the mix into two bowls. Add a few drops of food coloring to one of the bowls in order to make it the greenish yellow of a tennis ball. The other one will stay white to make the lines of the ball.

Once the cupcakes are cooled, use the green frosting and frost the top of the cupcakes. Make sure that the frosting is smooth, and does not have any extremely noticeable dents. Add the white frosting to the ziploc and cut a small corner of the bag off. Carefully make two curved lines on the edges of the cupcake in order for it to look like a tennis ball. Set the cupcakes into the fridge, until you are ready to enjoy them!
