The trees are changing and apple is in the air. Fall is here, fall is my favorite season, with all the colors and all the flavors. Have you been able to get your pumpkin spice latte yet? Back to apple, all apple trees are ready to be picked and eaten. Here is a quick recipe for apple pie cookies you can make in a pinch. With the perfect amount of apple and caramel.
Ingredients
- ! package of pie crusts (2 crusts)
- 5oz Caramel topping
- Canned apple pie filling (or you could use homemade)
- Egg
- Cinnamon
- Nutmeg
- Sugar
To start out preheat your oven. Let pie dough come to room temperature. Roll out one of the pie doughs into a circle and use flour underneath and on the rolling pin so it doesn’t stick.
Second, spread a thin layer of caramel topping into crust.
Third, spread apple pie filling on top. I recommend cutting up filling to the apple slices are not so big.
Fourth, cut your second pie crust into ½ inch srips. You could make a checkerboard pattern(like I did) or if you have time do some lattice work.
After you are happy with the strips, cut out cookies with a circle cookie cutter.
Transfer to a baking sheet, I would use a baking sheet with sides because of the caramel sauce, beat egg and mix 1 tsp of cinnamon, ¼ tsp of nutmeg, and ¼ of sugar together. Brush the cookies with egg and sprinkle with the sugar mixture.
Bake the cookies for 20-25 minutes or till golden brown. Make sure they are golden brown to get that good crunch.
These apple pie cookies fill the kitchen with a great apple smell and are hard to resist. Even if you are not home they will make you feel right at home. Hope you enjoy these sweet apple pie cookies.
