Maple Bacon Breakfast Birthday Cake

Have you ever wanted to give that special someone an amazing birthday breakfast? Well, I am here to tell you that we have the answer!  Maple Bacon Breakfast Birthday Cake, will tame their hunger. This cake is a single serving of of flapjacks, maple frosting and BACON!

In a large bowl, sift together the flour, baking powder, sugar, and salt.

Make a little well in the middle of the dry ingredients.
Pour in milk, egg, and melted butter. Mix until dry ingredients are incorporated. Batter may be a little lumpy. Do not over-stir or your pancakes may become tough.



Heat a lightly oiled griddle or frying pan over medium heat. Use a 1/4 cup measure to pour 4"-5" pancakes onto griddle.



Try hard to keep the pancakes in a circle so the pancakes can be stacked into a form of a cake. Flip the pancakes when bubbles have formed on top of batter and edges appear to be browning. When flipping the pancake, the batter could splatter. No need to panic, simply cut it off the extensions.



Pancake Ingredients:

1 1/2 c. all-purpose flour               1 1/4 c. milk
3 1/2 tsp. baking powder               1 egg
1 tsp. salt                                        3 TBSP butter, melted
1 TBSP white sugar

Meanwhile, cook bacon is desired fashion until crisp.


Cut them into one-inch pieces and cook on a skillet over medium-low heat.

To absorb excess grease, cool on a plate covered in paper towels and set aside.



To make the frosting, first beat one stick of butter til creamy, add confectioners sugar half a cup at a time.

Add the maple flavor, being aware of consistency, you don't want the frosting to get too thin.

After you have the frosting to your liking frost layers of your pancakes. Then smooth it on top and down the sides. When that's all done, its time for the BACON!


Sprinkle the bacon pieces over the frosted pancakes and enjoy!



Frosting Ingredients:

1 stick butter
1 1/2 c. confectioners' sugar (or more for spreadable consistency)
1 tsp. maple flavor extract

Beat butter until creamy.  Add confectioners' sugar, a little at a time, continue beating until smooth. Add extract and mix well.
