Dunkin' Pumpkin Spice Scones

Have you ever been enjoying a warm cup of coffee and thought to yourself, hmm well this is missing something. I guarantee you that the thing you’re missing is a dessert to go along with it! But you don’t just want any dessert, you want a delicious, warm, fall themed dessert to satisfy your sweet tooth. If this sounds like you then this is the perfect recipe. The Pumpkin Spice Scones flavors will scream Autumn and will go perfectly with all you Autumn drinks so let’s get into it!

Ingredients:
For Scones:
  • 2 cups all-purpose flour
  • 7 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 tablespoons pumpkin pie spice ( or 1/2 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg, 1/4 teaspoon ground cloves, and 1/4 teaspoon ground ginger.)
  • 6 tablespoons cold butter, got into small cubes
  • 1/2 cup canned pumpkin
  • 3 tablespoons half-half
  • 1 large egg

For Powdered Sugar glaze:
  • 1 cup & 1 tablespoon powdered sugar
  • 2 tablespoons half-half (or milk)

For Spiced glaze:
  • 1 cup & 1 tablespoon powdered sugar
  • 2 tablespoons half-half (or milk)
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • Pinch of ground ginger
  • Pinch of ground cloves


Steps:

  1. First in a large bowl, whisk together your 2 cups flour, 7 tablespoons sugar, 1 tablespoon baking powder, 1/2 teaspoon salt, and 1 tablespoon of your pumpkin spice.

2.) Next take a fork and cut your butter into the your dry ingredients. Your mixture should then be crumbly with no pieces of butter bigger than the size of a pea.

3.) Now take a medium bowl and whisk together your 1/2 cup canned pumpkin, 3 tablespoons half-half, and your egg. While doing this preheat your oven to 425 degrees F.

4.) Once you’ve whisked that together, pour it into your dry ingredients. You’re going to want to fold your mixture into your dry ingredients until it’s mostly combined.

5.) For this step I sprinkled my work surface with flour because my mixture was pretty moist and was hard to handle. Then you’ll take your dough and knead the flour into it and make sure everything is well mixed.

6.) Pat your dough into an about 7 inch circle. After you’ve done that take a butter knife or pizza cutter and cut the circle into 8 triangles like a pizza.

7.) Our scones are just about ready to be baked. Get your baking sheets, line them with parchment paper, and then set the scones on them.

8.) Bake the scones for 14-16 minutes. Once they are done put them on a cooling rack so they can completely cool before we start our glazing.

9.) We’re now going to begin making our glazes. Take a small bowl and whisk together your 1 cup & 1 tablespoon powdered sugar and 2 tablespoons half and half until it is smooth.

10.) Then use a pastry brush and spread your glaze over the top of your scones. Then let it dry for about 12 minutes before adding your spice drizzle.

11.) While your glaze is drying take a small bowl again and whisk together 1 cup & 1 tablespoon powdered sugar, 2 tablespoons half-half, 1/4 teaspoon ground cinnamon, 1/8 teaspoon ground nutmeg, a pinch of ground ginger, and a pinch of ground cloves until smooth.

12.) Now take a spoon and drizzle the spice glaze over the top of your scones. Then let your glaze dry before serving.

Mama's Homemade Chocolate Chip Cookies

Do you ever come home from school searching for that perfect snack? Well search no more, because Mama’s Homemade Chocolate Chip Cookies is perfect for you! The gooey chocolate chips dance on the tip of your taste buds begging for more. You eat another and another, your mouth is exploding with flavors and the cookie is melting fresh out of the oven.

What you will need:
  • 3/4 c. Crisco Shortening
  • 1 1/4 C. Light Brown Sugar
  • 2 TBsp. Milk
  • 1 Tsp. Vanilla Extract
  • 1 Large Egg
  • 2 C. All Purpose Flour
  • 1 Tsp. Salt
  • 3/4 tsp. Baking Soda
  • Chocolate Chips ( as many as you would like )

Directions:
  • Preheat to 375 degrees.
  • Beat the shortening, brown sugar, milk and vanilla together in a large mixing bowl.


  • Beat in 1 egg.
  • Combine flour, salt and baking soda.
  • Mix in shortening mixture until just blended.


  • Mix in the chocolate chip with a spoon.

  • Drop the cookies a least 3 inches apart on an ungreased baking sheet.
  • Bake 8 to 10 minutes or until light golden color, let cool for 2 minutes.





Candy Corn Krispy Treats

If your family is anything like mine there's half of you that love candy corn, and the other half absolutely hates them. I came up with a fun creative way for everyone to be able to enjoy a candy corn looking treat.

1 bag of mini marshmallows
2-3 Tbs butter
4-5 cups of  Rice Krispies
Orange food coloring
White chocolate chips
Milk chocolate chocolate chips

  1. Melt butter in a medium sized saucepan over medium heat, and add in all of your marshmallows. Stir often until the marshmallows are melted and smooth.

  1. After marshmallows are smooth add in your orange food coloring until it is your desired shade of orange.

  1. Measure out your rice krispies into a bowl, and set aside until your marshmallow mixture is done.

  1. Once completely melted and smooth poor colored marshmallows over the measured rice krispies and mix until evenly coated.

  1. Spray a pan with nonstick spray and dump rice krispy mixture into pan and spread out. (Tip: Spray your hands with nonstick spray and use your hands to evenly distribute the rice krispy mixture.)

  1. Flip rice krispy treats out of the pan and cut into triangles that resemble the shape of candy corn.

  1. Place both kinds of chocolate chips in respective bowls and melt. Then dip your krispy treats in the chocolate. The small point goes in white chocolate, and the milk  chocolate goes on the larger flat end. (Tip: Dip in about a half inch.20161018_122548.jpg


  1. Place on parchment lined pan and refrigerate until chocolate sets.

Red Velvet Brownies with Cream Cheese Frosting

Are you in need of a quick, easy treat? These delicious red velvet brownies are exactly what you are looking for! I was surprised at just how easy these brownies were to make and how flavorful they were. I absolutely love red velvet cupcakes and brownies so when I found this recipe I knew I had to try it. I was extremely pleased at how the turned out. They had the chewy texture of brownies and the flavor of red velvet cupcakes. This recipe has the best of both red velvet cupcakes and brownies.

Ingredients:
  • 1 (4 oz.) bittersweet chocolate baking bar, chopped
  • 3/4 cup butter
  • 2 cups sugar
  • 4 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 (1 oz.) bottle red liquid food coloring
  • 1 1/2 teaspoon vanilla extract
  • Cream Cheese Frosting:
    • 1 (8 oz.) package cream cheese
    • 3 tablespoons butter, softened
    • 1 1/2 cups powdered sugar
    • 1 teaspoon vanilla extract
Instructions:
  1. Preheat oven to 350 degrees. Line a 9x9 or 7x11 inch pan with aluminum foil allowing 2 inches to hang over the sides. Lightly greased.
  2. In a microwave safe bowl melt the chocolate and butter stirring after 30 seconds each time being careful not to burn the chocolate. Whisk in the sugar and add the eggs one at a time until blended.

  1. Add the flour, red food coloring, baking powder, and vanilla. Stir until fully mixed.

  1. Pour into the bottom of your prepared baking pan and bake for 40-44 minutes until toothpick comes out clean with moist crumbs. Cool completely.
  2. To make the cream cheese frosting:

    1. Beat together the cream cheese and butter until smooth.
    2. Add the powdered sugar and vanilla and continue to beat until creamy.
    3. Frost the cooled brownies.

Chocolate Chip Cookie in a Mug

This is my favorite treat to have after a long day of school and practice along with a glass of milk. It’s so easy to make and it is much easier to make than a whole pan of cookies!
Ingredients:IMG_5448.JPG
  • 1 Tbsp butter
  • 1 Tbsp granulated sugar
  • 1 Tbsp packed brown sugar
  • 3 drops vanilla extract
  • 1 egg yolk
  • ¼ cup flour
  • ⅛ tsp baking soda
  • ¼ cup of chocolate chips

Step 1: In a mug of your choice, add butter and soften in the microwave for 10-15 seconds. Using a different size and/ or type of cups may affect your cooking time.

Step 2: Add sugar, brown sugar, vanilla extract, and egg yolk; mix
together with a fork.

Step 3: Stir in flour and baking soda.  Texture should be consistency you would expect for cookie dough. Stir in the chocolate chips.

Step 4: Place in microwave and cook at high heat for 40-60 seconds. Start checking at 40 seconds. Do not go over 60 seconds or the cookie will burn and get rock hard!  It is best served warm.
