Healthy Avocado Chocolate Chip Cookies

I was super excited when I found this on Pinterest! I have always wanted to try some kind of healthy chocolate and now I have! This recipe is so unique and I can’t wait to show you how it turns out.

What you will need:
  • ¾ cup of Avocado (1 ½ avocado)IMG_5383.JPG
  • ½ cup of honey
  • 1 egg
  • ½ cup cocoa powder
  • ¼ cup chocolate chips
  • ½ tsp baking soda
  • Parchment paper

Step 1: Preheat oven to  350 degrees Fahrenheit.
Step2: In a bowl using a hand mixer, mix together Avocado and honey until smooth, add egg and mix again.

Step 3: Mix in cocoa powder and baking soda.

Step 5: Using 2 spoons, place dollops of cookie dough on a cookie sheet lined with parchment paper. The cookie won’t spread as much as usual cookies so make sure to flatten them out a bit with the back of a spoon.
Step 6: Bake for 8-10 minutes or until the cookies don’t stick as much to the paper as they did before baking.
Step 7: Cool down, and then store in the fridge.IMG_5398.JPG


Cake Batter Truffles



What you will need:
  • 5 Tbsp of Butter
  • 1/4 C. Sugar
  • 1/4 C. Flour
  • 1 C. yellow cake mix
  • 1 tsp. Vanilla
  • 3 tbsp. Milk
  • 8 blocks of almond bark
  • Prefered, rainbow sprinkles for topping

Directions:
  • In a stand mixer, mix together the butter, sugar,flour, yellow cake mix and vanilla.

  • Slowly add milk until the dough comes together.


  • Once the dough is formed make sure it is not sticky or wet, the dough should be firm.
  • Roll the balls into 24, 1 inch balls.
  • When all of the balls are rolled, place in the fridge for 15 minutes.



  • Then melt the almond bark and dip the cake batter balls into the chocolate mixture.
  • Then sprinkle what you desire on top while they are still wet.

Acorn Delights



It is this time of year that squirrels gather acorns to store in their nest to survive the winter with. Without their source of food, they would wither away. It is kind of like how you and I might wither away without the taste of these delicious and adorable treats. The chocolatey taste with the crunch and the savory peanut butter will leave your mouth salivating for more. Since I know you can hardly hold off any longer now that you are intrigued, let's take a look at how to make them.

You will need:
Nutter butters (preferably bite size)
Hershey´s kisses
Chocolate Chips

Step No. 1:

Before I begin, I will tell you that to make things a lot easier, you should get the bite sized nutter butters, however, I couldn't find any which is why I got the regular kind. If you did get the regular kind like me, you will need to break your nutter butters in half. Then, I used a butter knife to kind of chisel away at the uneven edges and make them a little bit more round.


Step No. 2:

The next step is to simply unwrap all of your Hershey´s kisses so that they are all ready to put on at once.


Step No. 3:

Next, you will need to take some of your chocolate chips, I just used about ¼ cup, and melt them either in the microwave or over the stove top. These melted chocolate chips will serve as your ¨glue¨ for holding your nutter butters to your Hershey's kisses.

Step No. 4:

Now it is time to assemble your acorns. Place a small dab of the melted chocolate on one side of your nutter butter and stick the kiss right in the middle.


Step No. 5:

Lastly, to make the acorn look even more realistic, melt a few more chocolate chips (this time, 1 chocolate chip per acorn) until they are just a little soft. You don't want them to be completely melted, just malleable enough that they will stick to your acorns. Once they are slightly melted, just stick one on each acorn to act as the top or ¨stem¨ of the acorn.


I don't know about you, but I think these acorn treats are super cute and they taste even better than they look! Not to mention the fact that they are super easy to make and only require three ingredients. If you were feeling really creative, you could make cupcakes and use these as the decorations. These could even be perfect as decorations on a table serving fall food for a party. Whatever you want to use them for, I can almost guarantee that everybody will love them!
